Here is another super easy crockpot meal for those days when
you have too much on your plate to worry about dinner!
What you’ll need:
- Boneless, Skinless Chicken Breast (Like I said in a previous recipe, I like to do a basic seasoning on mine. Also I like to defrost mine in the refrigerator the night before and cut them into strips for more thorough cooking.)
- 1 8-Oz Block of Cream Cheese
- 1 Can of Black Beans drained and rinsed
- 1 Can of Corn drained
- 1 Can Rotel
- Optional: White Rice or Tortillas (depending on how you want to serve it
What you'll do:
- Put all ingredients into your crock pot. I like to put the chicken in first just to make sure its cooked all the way.
- Cover and cook on low for 7.5 hours. I like to stir it occasionally once the ingredients are melted down and it becomes more liquid-y.
- Take out chicken and shred with a fork. place shredded chicken back in the crockpot and cook for an additional 30 minutes.
- Serve on a tortilla or over rice and Bon Appatit!
